Don’t women cook anymore? It is becoming harder and harder to get recipes from women for these blogs!! Gigi and Helen have a lot of great recipes, but we would love more from our female readers (and from men of course!!)
Swordfish
Ingredients:
2 12oz swordfish steaks [or about an inch thick]
1/4 c. Champagne vinegar
1 c. Oil [use canola or grape seed oil-NOT vegetable oil.]
1 tsp dijon mustard
1/2 tsp salt liberal cracked black pepperMix salt,pepper, mustard and vinegar together well in a blender or with an emersion blender.
Drizzle in oil in fine stream while blender is going [use hole in lid] till thick.
Pour into gallon ziplock bag.
Put in swordfish and turn over to coat.
Marinate over night. *note-you do not want any of that dark red meat on your swordfish… make them cut it off before weighing it or go somewhere else to get it.It tastes like steak. You can also pan fry it. Take out of the marinade… discard used marinade.
Use heavy pan… get it very hot and put the swordfish steaks in.
Put them in the right spot so you don’t have to move them because they might stick.
Cook 3-5 minutes per side.Swordfish is one of those meats that doesn’t have to be cooked well-done. You can serve this with any side dish..but if you are in a rush throw a couple of russet potatoes in the microwave [please wash and poke] put them on for 7 min to start, and then make some glazed carrots.
While meat and potatoes are cooking… peel 4-5 carrots trimming ends.
To make a half inch pieces first make a diagonal one way and then in the other direction till all are done.
Put butter and 2 tsp oil in a hot pan…
Add carrots…
Saute till almost done…
Add a pinch of salt & 3 Tablespoons frozen orange juice concentrate plus 1Tablespoon brown sugar.
Stir to coat…cook an additional 3-5 min.
Thankfully Shari came through for me again, and sent me another yummy recipe. Now that Gigi has a man to cook for (more on that later, still don’t want to jinx it), I will try out all the recipes posted here. I get kind of tired of doing the same recipe all the time. Of course, before I rarely got to cook more than once. Now I am about to prepare a second meal for him, so I need a new recipe!! Yay me!!
